Comforting Soups Colorful Salads
by Julie Brinkley

As great as the recipes are in this book, there is a taste more refined that is more pleasing still to the palette—love!

Love can be tasted in the food we eat by the feeling in the moment, the beauty in the grace of serving and the wholesomeness our bodies feel after a healthy, nourishing meal. These are all recipes for comforting soups and colorful salads.
We can find gratitude and joy in these moments, and finding this, Spirit is transmitted to our food and to our families and friends.

I learned a lot about cooking with love from my Mother, who had all the Southern graces. Cooking became even more conscious after I met Adnan Sarhan, a sufi teacher. He taught me how food can influence the body, the mind and the spirit. With this knowledge, I started to cultivate awareness of recipes and how to serve food which led to being the chef at my brother, David Elliott’s retreats. David is author of the book, The Reluctant Healer and Healing.

Being the chef at his workshops, trainings and retreats, I have learned that the “well being” after a meal is essential so the work can continue and this prepares the body for healing. This opportunity allowed my awareness, my creative flow, and my knowledge of cooking to expand.

I serve others at my East Mountain center. I encourage healing, relaxation, and well being with healthy food prepared in love.

In this book Soups and Salads, we look at soups because of the comfort that they can infuse and salads for their fresh, instilling energy. Who has not felt the warming comfort of a hearty bowl of soup? Who has not found a crisp, colorful salad, refreshing and enlivening?

These recipes always fit the bill and generate good feedback from all. Tasty, nourishing food promotes a healthy body and mind.

You will find that these recipes echo many of today’s health-conscious trends without being dogmatic. Again, there is a higher ingredient that we are all beginning to understand as most important in our food… love.

You will be delighted to discover these recipes have simple hints to accommodate or teach wholesome ways of eating. These recipes promote pH balancing, healthy fats, nutrition for well-being, and embrace the vegetarian ideal.

Buy organic whenever possible, support local growers, grow your own! I find my best meals are those that come fresh from a garden. When the food has not only been cooked by loving hands, but grown by loving hands, then the love enlightens the meals.

I hope you will enjoy with your families and friends the many pleasures and benefits that come from making and sharing comforting soups and delicious, colorful salads over many meals.

From the Foreword

Julie, is an amazing artist with food, who has inherited from our mother an innate ability to bless her meals with love. This ability gives her food a delicious, nutritious, and irresistible quality. I am fortunate to have Julie handle the nourishment of all the people that come to my workshops. I don't bother asking about the menu, because I know the food will be a highlight. Enjoy this cookbook, because her love is flowing through the menus the same way. Get ready for compliments about your cooking!
